Tofu–Herb Scramble on Sourdough
Ingredients
- 100 g tofu
- ½ tbsp olive oil + 1 tbsp oil (for toast)
- 1 tbsp nutritional yeast
- 1 clove garlic, minced
- Dash of salt & pepper
- Handful of parsley & basil
- 1 tbsp lemon juice
- 2 slices sourdough
Use firm tofu for the best scramble texture.
Preparation
- Heat olive oil in a pan and sauté the minced garlic until fragrant.
- Add tofu to the pan and sauté until slightly golden brown.
- Transfer tofu to a bowl and crumble it gently using a fork.
- Add lemon juice, herbs, nutritional yeast, salt, and pepper. Mix well.
- Toast the sourdough slices using the remaining oil.
- Spoon the tofu–herb scramble onto the toast.
- Top with seeds of your choice and serve warm.
