Tofu-Herb Scramble on sourdough

Tofu–Herb Scramble on Sourdough

Vibe: Light • Creamy • Flavourful Protein: ~17g plant protein

Ingredients

  • 100 g tofu
  • ½ tbsp olive oil + 1 tbsp oil (for toast)
  • 1 tbsp nutritional yeast
  • 1 clove garlic, minced
  • Dash of salt & pepper
  • Handful of parsley & basil
  • 1 tbsp lemon juice
  • 2 slices sourdough
Use firm tofu for the best scramble texture.

Preparation

  1. Heat olive oil in a pan and sauté the minced garlic until fragrant.
  2. Add tofu to the pan and sauté until slightly golden brown.
  3. Transfer tofu to a bowl and crumble it gently using a fork.
  4. Add lemon juice, herbs, nutritional yeast, salt, and pepper. Mix well.
  5. Toast the sourdough slices using the remaining oil.
  6. Spoon the tofu–herb scramble onto the toast.
  7. Top with seeds of your choice and serve warm.
