Edamame–Mushroom Toast
Ingredients
- ½ cup edamame, boiled
- ½ tbsp oil + 1 tbsp oil (for toast/topping)
- ½ cup parsley
- 1 clove garlic, minced
- ½ tbsp lemon juice
- Dash of red & green chilli, salt to taste
- 2 slices sourdough
- Sautéed mushrooms, to top
Lightly mash the edamame for a chunky, spreadable texture.
Preparation
- In a bowl, combine parsley, garlic, salt, oil, and chillies. Mix well.
- Add boiled edamame, lemon juice, and adjust salt to taste.
- Toast the sourdough slices using the remaining oil.
- Spread a generous layer of the edamame mixture on the toast.
- Top with sautéed mushrooms and serve warm.
