Edamame–Mushroom Toast

Ingredients

  • ½ cup edamame, boiled
  • ½ tbsp oil + 1 tbsp oil (for toast/topping)
  • ½ cup parsley
  • 1 clove garlic, minced
  • ½ tbsp lemon juice
  • Dash of red & green chilli, salt to taste
  • 2 slices sourdough
  • Sautéed mushrooms, to top
Lightly mash the edamame for a chunky, spreadable texture.

Preparation

  1. In a bowl, combine parsley, garlic, salt, oil, and chillies. Mix well.
  2. Add boiled edamame, lemon juice, and adjust salt to taste.
  3. Toast the sourdough slices using the remaining oil.
  4. Spread a generous layer of the edamame mixture on the toast.
  5. Top with sautéed mushrooms and serve warm.
