Mango–Ginger Dressing

  • 1 medium mango
  • 2 tbsp olive oil
  • ½ tsp chopped ginger
  • 2 tsp lemon juice
  • ½ tsp red chilli flakes
  • ½ green chilli
  • A handful of mint, basil & coriander leaves
  • Pinch of salt
Blend everything until smooth and creamy, adjusting salt or lemon to taste.

For the Bowl

  • Cooked quinoa
  • Roasted veggies of choice
  • Avocado
  • Edamame, steamed
  • Greens, blanched or lightly sautéed (spinach works great)
  • Kimchi
  • Cherry tomatoes

Preparation

  1. Plate cooked quinoa as the base.
  2. Add roasted veggies, steamed edamame, sautéed or blanched greens, kimchi, avocado, and cherry tomatoes.
  3. Drizzle the mango–ginger dressing generously on top.
  4. Mix well and enjoy fresh.
