Asian Buddha Bowl
Mango–Ginger Dressing
- 1 medium mango
- 2 tbsp olive oil
- ½ tsp chopped ginger
- 2 tsp lemon juice
- ½ tsp red chilli flakes
- ½ green chilli
- A handful of mint, basil & coriander leaves
- Pinch of salt
Blend everything until smooth and creamy, adjusting salt or lemon to taste.
For the Bowl
- Cooked quinoa
- Roasted veggies of choice
- Avocado
- Edamame, steamed
- Greens, blanched or lightly sautéed (spinach works great)
- Kimchi
- Cherry tomatoes
Preparation
- Plate cooked quinoa as the base.
- Add roasted veggies, steamed edamame, sautéed or blanched greens, kimchi, avocado, and cherry tomatoes.
- Drizzle the mango–ginger dressing generously on top.
- Mix well and enjoy fresh.
